They've been on my wife's list for a while, they crop up in the odd cookery book as a quick fun mid week option.
I said I'd give her a hand, and so was presented with a couple of options. I also had my own as well from the bold bean company. I quickly scanned the three to get the general gist and then to summarise in my own way quirky way.....deduced the following. Prepare the filling, apply the glue (cheese), flip and fold whilst watching they don't burn!

My sincere apologies to the Quesadilla aficionados! I was eager to whip up a recipe this week with a view of offering up for something in my Cook One Thing section. So here's my humble take on the Mexican grilled sandwich. No corn tortillas were harmed in the making of this dish! However, the general-purpose wraps from the freezer bought it :)
spinach, half bag, wilted and moisture removed
re-fried black beans, a tin or half a large jar
gruyere, or any cheese that's great for melting, about 150g grated
flat bread, wraps, or tortillas - 3
These are really quick to make, so it's about having the filling ingredients ready, and not too wet.
I used some beans from a jar of bold beans, had to cook them a little to get the liquid moving, then they were like a soup, so I sieved and then added back into the pan. Chopped the spinach and added into the beans.
1. Heat a teaspoon of oil in a large frying pan over medium heat. Swirl the pan to ensure the oil coats the bottom.
2. Add a wrap to the pan and spread a third of the filling mixture over half of it. Sprinkle over a third of the cheese and then fold the tortilla in half. Press down gently to seal.
3. Cook over medium a medium heat until the bottom is golden, then flip and cook the other side until golden and the cheese has melted.
4. Transfer to a plate and repeat the process with the remaining filling and wraps.
